A couple of this week’s meals are inspired by what’s on sale at Star Market this week. I’ve been using their new MyMixx, My Savings app to go through the weekly ad, clip virtual coupons, and build my grocery list. With grass-fed strip steak, mango, and organic greens on sale this past week, I’m making my Mango Avocado Steak Salad. This is one of my favorite one-dish meals.
Wild-caught tuna was also on sale, so I bought some for later in the week. I put it in the freezer, and hopefully I’ll remember to transfer it to the fridge on Wednesday so it’s properly defrosted by Friday. It’s these little things that I tend to forget, so I put a note on my calendar.
I’m also trying a “Cook Once, Eat Twice” recipe. Last week’s Recipe Redux focused on this theme, and I’m excited to make a Leftovers Frittata with the vegetable leftovers that are floating around in the fridge. This looks like a delicious, easy whole food recipe that will taste great with the fresh chives growing in a pot on my windowsill.
