I had a dream the other night that it started snowing out. It was a stressful dream, so I guess I haven’t quite recovered from the record snowfall here in Boston this winter.
But in reality, we’re at the unofficial start of summer with Memorial Day this weekend. I picked up some Applegate hot dogs to get things rolling, and we’re also grilling fish one night. S’mores will be happening at some point as well.
My children’s last few weeks of school are full of chorus concerts, band concerts, and soccer practices in the evenings. I’m keeping things easy this week by making a big batch of Slow Cooker Pulled Pork to cover dinner for two of the weeknights. Unless I get inspired to make something more exciting, pasta and homemade pizza will get us through the rest of the week.
