I get the biggest weekly share this time of year, and it can be a struggle to eat it all. My goal is to keep everything out of the compost and on our plates instead. Some tomatoes and corn have been going into the freezer each week so I can focus on the more perishable items. We’ll have lots of salad and grilled vegetables along with our main dishes this week. And it may be time for another batch of homemade pickles.
My kids liked the Asian Glazed Salmon from Prep Dish better than my usual recipe, so I’m trying that one again. I’ll make smashed potatoes with all the baby potatoes I picked up at my farm share last week. We love those!
