Strawberry Granola Bar Recipe

This strawberry granola bar recipe makes a delicious, easy snack. You can avoid highly processed granola bars by making your own at home.
Granola bars are among the most convenient snack foods out there. Unfortunately, most packaged granola bars are full of added sugar, which makes them more of a dessert in my book. Snacks should give you energy and make you feel full until your next meal. Highly sweetened processed snacks just don’t do that.
This strawberry granola bar recipe provides whole grains, protein, and fiber. It’s just sweet enough, and some of the sweetness comes from the natural sugars in the banana and the strawberries. This is a great recipe for a family that’s just starting to transition away from processed food. It doesn’t taste too different from the snacks you’d buy at the store, but it lacks the unnecessary additives.
The process behind making these bars is simple. The hardest part is waiting for them to cool before you can start snacking on them!

Strawberry Granola Bars
- 1 cup gluten-free flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 2/3 cup melted coconut oil
- 1/2 cup pure maple syrup
- 1 small ripe banana mashed
- 1 tsp vanilla extract
- 2 cups rolled oats
- 3/4 cup unsweetened shredded coconut
- 1 cup diced walnuts or other nuts/seeds
- 8 oz finely chopped fresh strawberries (1 1/4 cups)
- Grease a 9 x 13 inch pan and preheat the oven to 350 degrees.
- In a small bowl, combine the flour, baking powder, and salt.
- In a large bowl, mix together the egg, melted coconut oil, maple syrup, banana, and vanilla. Stir in the flour mixture until combined.
- Add the oats, coconut, and walnuts, and stir to combine. Then stir in the strawberries.
- Press the dough evenly into the 9 x 13 inch pan. Bake on the center rack in the oven for 20 to 25 minutes, until the edges are beginning to get brown.
- Cool completely on a wire rack and cut into 14 bars. If you try to cut them before they’re completely cool, they’ll likely crumble apart. Store the bars in an airtight container for several days, or freeze them for several months.

Swapped: margarine for coconut oil, honey for maple syrup, all purpose flour for gluten free, raisins for coconut
Instead of walnuts: slivered almond, walnut, granola, and chia seed mix

I haven’t added strawberries into my granola bars yet! I love that it’s a better way to add sweetness into the bars without having to add sugars. Yum!
