Vanilla extract is a wonderful ingredient for making things taste delicious without adding sugar. My children were home from school recently for yet another snow day here in Massachusetts, so we celebrated by making a special breakfast.

These homemade vanilla waffles have the best flavor! The vanilla makes them more of a treat than plain waffles. As an added benefit, your house will smell amazing for hours after you make these.

If you have extra waffles, you can freeze them. This batch serves four, so you may want to double it and freeze the leftovers for an easy breakfast on a busy day.

Ingredients

  • 2 cups white whole wheat flour
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 3 eggs
  • 1 1/2 cups milk
  • 1/2 cup melted butter
  • 1 tbs vanilla extract

Instructions

  • In a small bowl, stir together the dry ingredients (flour, baking powder, and salt).
  • In a large bowl, mix the remaining ingredients (eggs, milk, butter, vanilla). Add the dry ingredients and stir to just combine.
  • Scoop a ladle full of batter onto a hot waffle iron and cook until light brown. Repeat with the remaining batter. Serve warm.
