Lentil Sweet Potato Casserole
This lentil sweet potato casserole is such a flavorful vegan dinner!

- 2 cups chopped sweet potatoes
- 1 red pepper chopped
- 1 cup sliced green beans
- 1/2 cup raisins
- 2 tbs olive oil
- 1 cup vegetable broth
- 1/2 tbs diced ginger
- 1 clove garlic diced
- 1/2 tsp curry powder
- 1 1/2 cups cooked lentils
Cook lentils according to package directions for a yield of 1 1/2 cups cooked lentils.
Preheat the oven to 400 degrees.
Mix the first four ingredients and the cooked lentils in a large bowl.
Mix the remaining ingredients in a small bowl and pour evenly over the vegetable mixture.
Transfer the mixture to a covered casserole dish.
Bake covered for about 30 minutes, or until vegetables are tender.
