Sweet Potato Pancakes

  • 1 1/2 cups gluten-free flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 medium sweet potato mashed
  • 2 eggs
  • 1 1/2 cups milk dairy or non-dairy
  • 1/4 cup melted butter or coconut oil


  • Mix together the dry ingredients in a medium bowl. Set aside.
  • In a large bowl, mix together the remaining ingredients. Add the dry ingredients and stir to combine.
  • Pour batter onto a hot griddle to make 4-inch pancakes, and flip when the surface is dotted with bubbles. This recipe makes about 14 pancakes.
