- 1 cup coconut milk
- 1 cup water
- ¼ cup frozen spinach
- 1½ cups chopped mango
- 2 medium ripe bananas
- 2 tbs cooked or soaked oatmeal
Place the coconut milk and water in a blender. I learned from Real Simple that adding the liquid first helps the blades to move freely.
Add the remaining ingredients to the blender and puree until smooth. Taste it to see if it needs a bit of maple syrup for extra sweetness.
Divide into 4 glasses and serve. This can also be refrigerated for later.
