Ingredients

  • 2 cups broth
  • 1 cup red lentils
  • 2 tbs olive oil
  • 4 scallions
  • 1 shallot
  • 4 carrots
  • 2 beets
  • 1/2 lb turnips
  • 3 cups chopped purple kale or other greens
  • 1/8 tsp cayenne pepper
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1 tsp salt

Instructions

  • Cook the lentils in the broth according to the package directions.
  • Chop all the vegetables and sauté everything except the greens in a large skillet until just tender.
  • Add the seasonings and sauté for another minute.
  • Add the lentils and greens to the skillet, and cook for another minute until the greens are wilted.  Serve immediately.
