  • 1 tbs olive oil
  • 1 lb mild Italian sausage cut into bite-sized pieces
  • 1 clove garlic minced
  • 1 yellow pepper chopped
  • 14 oz can artichoke hearts drained and quartered
  • 28 oz can San Marzano tomatoes
  • 15 oz can plain tomato sauce
  • 1 tsp maple syrup
  • Salt and pepper to taste
  • 2 lbs whole grain pasta
  • Fresh basil for garnish
  • Fresh Parmesan cheese for garnish


  • Fill a large pot of water and set it on the stove to boil.
  • While the water comes to a boil, heat the olive oil in a large skillet. Cook the sausage over medium heat, turning the pieces a few times for even cooking. Remove the cooked sausage and set aside. Leave the juices in the pan.
  • Place the garlic, yellow pepper, and artichoke hearts in the pan. Saute over medium low heat until the pepper begins to soften, about 3 minutes. Add the cooked sausage back to the skillet, along with the tomatoes, tomato sauce, and maple syrup. Season with salt and pepper, and chop up the whole tomatoes with a spatula. Simmer over medium heat, uncovered, for 10 minutes, or until thickened to your liking.
  • While the sauce is simmering, cook the pasta according to the package directions. Grate some fresh Parmesan cheese for serving.
  • When the sauce is done simmering, taste it and add more salt, pepper, and/or maple syrup as needed. (Remember that the parm will give it a little extra saltiness.)
  • Drain the pasta and divide it into pasta bowls. Top with sauce, Parmesan, and basil. Serve warm.
