- 1 tbs olive oil
- 1 tbs water
- 1 tbs pure maple syrup
- 1 1/2 tbs apple cider vinegar
- 1/4 tsp salt
- 1 pinch onion powder
- 3 oz fresh baby spinach (about 6 cups loosely packed)
- 8 ounces medium strawberries sliced
- 1/2 medium cucumber quartered and sliced
- 1/4 cup chopped walnuts
In a small bowl, stir together the olive oil, water, maple syrup, apple cider vinegar, salt, and onion powder.
In a large salad bowl, add the spinach, strawberries, and cucumbers. When ready to serve, toss the salad with the dressing and chopped walnuts.
If not serving immediately, refrigerate the salad and the dressing separately.
