Ingredients

  • 1 tbs olive oil
  • 1 tbs water
  • 1 tbs pure maple syrup
  • 1 1/2 tbs apple cider vinegar
  • 1/4 tsp salt
  • 1 pinch onion powder
  • 3 oz fresh baby spinach (about 6 cups loosely packed)
  • 8 ounces medium strawberries sliced
  • 1/2 medium cucumber quartered and sliced
  • 1/4 cup chopped walnuts

Instructions

  • In a small bowl, stir together the olive oil, water, maple syrup, apple cider vinegar, salt, and onion powder.
  • In a large salad bowl, add the spinach, strawberries, and cucumbers. When ready to serve, toss the salad with the dressing and chopped walnuts.
  • If not serving immediately, refrigerate the salad and the dressing separately.
