  • 8 watermelon circles approximately 1 lb., 3 inch diameter by 3/4 inch thick
  • 2 cups chopped lettuce
  • 1/4 cup feta cheese crumbled
  • 1 tbs balsamic vinegar


  • Cut the watermelon into 3/4-inch thick slices. Using a 3-inch cookie cutter or glass, cut out 8 watermelon circles.
  • Set up four plates, and set one circle on each plate.
  • Place 1/4 cup of chopped lettuce on top of each watermelon circle.
  • Sprinkle 1/2 tablespoon of feta cheese on each pile of lettuce.
  • Place the remaining 4 watermelon circles on top of each lettuce pile, then top with the remaining lettuce and feta. Sprinkle each salad with 1/4 tablespoon of balsamic vinegar.
  • Serve immediately.
