Cream the butter in the bowl of a stand mixer. Add the maple syrup and salt, and mix them with the butter. Then add the egg and vanilla, and mix to combine.
Sift the cocoa powder and flour together into a small bowl. Gradually add them to the mixing bowl with the butter mixture. Mix until all the dry ingredients are incorporated into the wet ingredients.
Transfer the dough to the cookie press. Press the dough onto ungreased cookie sheets. If the dough doesn’t come out of after the first press, give it a second press. If the dough is a little messy coming out of the press, you can gently press down on each cookie with your finger to even things out.
Bake the cookies for 8 to 10 minutes, or until set. Cool on a wire rack, and store in an airtight container.
