Artichoke Garlic Scape Pesto
This unique artichoke garlic scape pesto is a delicious, healthy appetizer.
- 1 1/2 cup artichoke hearts
- 3/4 cup walnuts
- 1/2 cup chopped garlic scape or to taste
- 1 tbs lemon juice
- 1/2 tsp salt
- 1 tbs olive oil
In a blender or food processor, combine all the ingredients. Process until it becomes a paste.
Serve at room temperature or chilled. This pesto can be frozen, and it gets more mellow after several weeks in the freezer.
