Ingredients

  • 2 cups peeled zucchini loosely packed
  • 2 cups peeled carrots loosely packed
  • 1 scallion chopped
  • 1/2 tbs lemon juice
  • 1 tbs olive oil
  • 1/8 tsp Dijon mustard
  • 1 tsp red wine vinegar or other vinegar
  • 1/8 tsp salt

Instructions

  • Peel the zucchini and carrots into ribbons with a vegetable peeler or similar device.
  • In a medium bowl, toss together the zucchini, carrots, and scallion.
  • In a small bowl, stir together the remaining ingredients.
  • Pour the dressing over the vegetables. Serve immediately or refrigerate.
