  • 1 lb peaches
  • 1/2 lb tomato
  • 2 tbs chopped onion
  • 1/4 lb red bell pepper
  • 1/4 lb green bell pepper
  • 1/4 lb cucumber
  • 1 tbs chopped jalapeno pepper seeds removed
  • 1 tbs lime juice
  • 3/4 tsp salt or to taste


  • Chop the peaches, tomatoes, onion, bell peppers, and cucumber. Place them in a food processor.
  • Dice the jalapeno pepper and add it to the food processor along with the lime juice and salt.
  • Pulse 7 or 8 times and then check the consistency of the salsa. Continue pulsing until you get a slightly chunky consistency. You don’t want to liquefy the whole mixture.
  • Store the salsa in the refrigerator in an air-tight container.
