Ingredients

  • 1 1/2 cups coconut milk or other milk
  • 1 1/4 cups rolled oats
  • 3 medium Medjool dates (or 2 large dates, pits removed)
  • 1/2 cup dehydrated apples
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp salt

Instructions

  • In a medium bowl, stir together the coconut milk and oats.
  • Place the dates and apples in a food processor and finely chop them.
  • Stir the dates and apples into the oats, and add the cinnamon, ginger, and salt.
  • Divide the mixture evenly into two pint-sized mason jars.  Cover and refrigerate overnight.
  • In the morning, you can serve this cold or warm it up on the stove.
