Chili Lime Salmon

Ingredients

  • 1 lb salmon
  • 1 tbs olive oil
  • 1/4 cup lime juice
  • 1 tsp lime zest
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 tbs coconut sugar
  • 1 tsp salt
  • 1 tsp chipotle in adobo

Instructions

  • Place the salmon in a baking dish.
  • In a small bowl, stir together the remaining ingredients. Pour this mixture over the salmon. Cover the baking dish and refrigerate the salmon for 30 minutes to marinate.
  • Preheat the oven to 325 degrees. Bake the salmon for about 20 to 25 minutes. If it's especially thick, it may take a little longer. Thinner cuts of salmon may be done sooner. I like to cook it all the way through until it's no longer bright pink in the middle.
  • If desired, you can place the salmon under the broiler for the last minute of cooking to brown the topping a bit. Serve warm.
