This watermelon salsa is a unique summer recipe.
Cost $.11 per serving (1/4 cup)
- 3 cups chopped watermelon
- 1 tbs chopped fresh mint
- 1 tbs chopped cilantro
- 1 tbs diced shallot
- 1 tbs lime juice
- 1 tbs olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp cumin
In a large bowl, stir together the watermelon, mint, cilantro, shallot, lime juice, and olive oil. Sprinkle with the salt, pepper, and cumin, and stir again to coat evenly.
Refrigerate the salsa until you're ready to serve it. This will give the flavors a little time to mingle. Serve within three days.
