Homemade Fruit Popsicles
These homemade fruit popsicles are an easy, delicious vegan dessert. ($.36 per popsicle)
- 2 cups coconut milk
- 1/4 cup pure maple syrup
- 1/4 cup chopped pineapple
- 1/4 cup chopped strawberries about 2 strawberries
- 1/4 cup chopped kiwi about half a kiwi
- 1/4 cup chopped peaches about half a peach
In a medium bowl, stir together the coconut milk and the maple syrup.
Chop the fruit and place it in a separate bowl.
Divide coconut milk into 6 half-cup popsicle molds. Add a mixture of fruit to each popsicle mold, filling almost to the top.
Freeze the popsicles for at least 5 hours. When ready to serve, run each popsicle under warm water until it slides easily out of the mold.
