Rainbow Detox Salad
This rainbow detox salad is an easy, healthy side dish recipe.
- 2 celery stalks chopped
- 1 orange pepper chopped
- 2 medium red apples cored and chopped
- ½ cup golden raisins
- ¼ cup diced almonds or walnuts
- ½ cup plain whole milk yogurt
- 2 tsp. lemon juice
- 1 tsp. honey
- ¼ tsp. salt
- 1 tsp. diced chives
Chop the celery, pepper, and apples. Place them in a large bowl, and stir in the raisins and nuts.
In a small bowl, stir together the yogurt, lemon juice, honey, and salt. Pour the dressing over the fruit and vegetable mixture. Stir to coat evenly.
Sprinkle the salad with diced chives. Serve immediately, or refrigerate until ready to serve.
