This apple cake is a wonderful fall dessert.

- 2 1/4 cups white whole wheat flour
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 3 eggs
- 1/2 cup melted coconut oil or butter
- 1 1/4 cups maple syrup
- 1 lb apples peeled, cored, and diced (2 medium apples)
- 1 cup diced nuts optional
Preheat the oven to 350 degrees and grease a 9 by 13 inch pan.
In a small bowl, stir together the flour, baking soda, salt, cinnamon, ginger, and nutmeg. Set aside.
In a large mixing bowl, combine the eggs, coconut oil, and maple syrup. Add the dry ingredients to the big bowl, and mix to combine.
Stir in the diced apples (and nuts if you’re using them).
Transfer the batter to the baking dish, and bake for 35 to 40 minutes. A toothpick inserted in the center of the cake should come out clean.
For an extra treat, brush a bit of maple syrup on the cake and sprinkle a little cinnamon on top as the cake is cooling.
