- 2 cups broth
- 1 cup red lentils
- 2 tbs olive oil
- 4 scallions
- 1 shallot
- 4 carrots
- 2 beets
- 1/2 lb turnips
- 3 cups chopped purple kale or other greens
- 1/8 tsp cayenne pepper
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1 tsp salt
Cook the lentils in the broth according to the package directions.
Chop all the vegetables and sauté everything except the greens in a large skillet until just tender.
Add the seasonings and sauté for another minute.
Add the lentils and greens to the skillet, and cook for another minute until the greens are wilted. Serve immediately.
