- 1 1/2 cups coconut milk or other milk
- 1 1/4 cups rolled oats
- 3 medium Medjool dates (or 2 large dates, pits removed)
- 1/2 cup dehydrated apples
- 1/4 tsp cinnamon
- 1/8 tsp ginger
- 1/8 tsp salt
In a medium bowl, stir together the coconut milk and oats.
Place the dates and apples in a food processor and finely chop them.
Stir the dates and apples into the oats, and add the cinnamon, ginger, and salt.
Divide the mixture evenly into two pint-sized mason jars. Cover and refrigerate overnight.
In the morning, you can serve this cold or warm it up on the stove.
