Pop the popcorn. I use this air popper, but any popping method will work.
In a small bowl, stir together the melted coconut oil, maple syrup, ginger, cinnamon, nutmeg, and salt. Place the popped popcorn in a large roasting pan or on a baking sheet that has sides. Pour the maple syrup mixture over the popcorn and stir gently, so that the popcorn is evenly coated.
Bake for 6 to 8 minutes, stirring every couple minutes. Once it starts to brown a bit, it's done. Cool on a wire rack.
