Ingredients

  • 2 cups coconut milk
  • 1/4 cup pure maple syrup
  • 1/4 cup chopped pineapple
  • 1/4 cup chopped strawberries about 2 strawberries
  • 1/4 cup chopped kiwi about half a kiwi
  • 1/4 cup chopped peaches about half a peach

Instructions

  • In a medium bowl, stir together the coconut milk and the maple syrup.
  • Chop the fruit and place it in a separate bowl.
  • Divide coconut milk into 6 half-cup popsicle molds. Add a mixture of fruit to each popsicle mold, filling almost to the top.
  • Freeze the popsicles for at least 5 hours. When ready to serve, run each popsicle under warm water until it slides easily out of the mold.
