Ingredients

  • 2 cups chopped sweet potatoes
  • 1 red pepper chopped
  • 1 cup sliced green beans
  • 1/2 cup raisins
  • 2 tbs olive oil
  • 1 cup vegetable broth
  • 1/2 tbs diced ginger
  • 1 clove garlic diced
  • 1/2 tsp curry powder
  • 1 1/2 cups cooked lentils

Instructions

  • Cook lentils according to package directions for a yield of 1 1/2 cups cooked lentils.
  • Preheat the oven to 400 degrees.
  • Mix the first four ingredients and the cooked lentils in a large bowl.
  • Mix the remaining ingredients in a small bowl and pour evenly over the vegetable mixture.
  • Transfer the mixture to a covered casserole dish.
  • Bake covered for about 30 minutes, or until vegetables are tender.
