- 3 mandarin oranges
- 1 cup plain Greek yogurt or non-dairy yogurt of choice
- 1 tsp pure maple syrup or to taste
- 1/4 cup granola or finely chopped pecans
Peel one mandarin orange and separate the mandarin sections. Chop them into bite-sized pieces and set aside.
Slice the other 2 mandarins in half lengthwise. Remove the juice with a citrus juicer. (yields 1/4 cup juice)
In a medium bowl, stir together the juice, yogurt, and maple syrup. Add the granola and stir it into the yogurt.
Transfer the yogurt to 2 small bowls, and top each one with the chopped mandarins that were set aside. Enjoy!
