Mandarin oranges are such a sweet treat. I keep them in my produce drawer year-round for a quick, healthy snack.

This easy orange yogurt parfait recipe features freshly sweetened orange yogurt with a topping of chopped mandarins. Granola or chopped nuts are stirred into the yogurt for a delicious crunch. The combination of yogurt and citrus fruit is so refreshing.

The best way to get the juice from an orange is with a citrus juicer. I like to use my lemon juicer with mandarin oranges because they fit perfectly in the juicer. Use a small bowl or glass to catch the juice.

Variations

For a stacked presentation in this orange yogurt parfait, you can serve this in a taller parfait cup. Spoon half of the yogurt into the glass, followed by a layer of chopped mandarins, and repeat. 

Other toppings could include raisins, fresh blueberries, or a sprinkle of shredded coconut. Fresh orange zest will give it an extra boost of flavor.

Ingredients

  • 3 mandarin oranges
  • 1 cup plain Greek yogurt or non-dairy yogurt of choice
  • 1 tsp pure maple syrup or to taste
  • 1/4 cup granola or finely chopped pecans

Instructions

  • Peel one mandarin orange and separate the mandarin sections. Chop them into bite-sized pieces and set aside.
  • Slice the other 2 mandarins in half lengthwise. Remove the juice with a citrus juicer. (yields 1/4 cup juice)
  • In a medium bowl, stir together the juice, yogurt, and maple syrup. Add the granola and stir it into the yogurt.
  • Transfer the yogurt to 2 small bowls, and top each one with the chopped mandarins that were set aside. Enjoy!
