Ever since my kids were little, I’ve made it a priority to buy the healthiest possible groceries. This is one thing I can do to teach them the importance of taking care of themselves. Making food from scratch using nutritious ingredients is the best way to stick to a budget and stay healthy.

Ingredients
- 3 cups quick oats
- 1 1/2 cups brown rice crisp cereal
- 1 1/2 cups unsweetened shredded coconut
- 1/2 cup chopped almonds
- 1/2 cup coconut sugar
- 2/3 cup melted coconut oil
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions
- Preheat the oven to 275 degrees.
- In a large bowl, mix together the oats, brown rice cereal, shredded coconut, nuts, and coconut sugar.
- In a small bowl, stir together the coconut oil, vanilla extract, and cinnamon. Pour the liquid mixture over the dry ingredients and stir to cover evenly. Taste the mixture and add a little more cinnamon or sugar if needed.
- Transfer the mixture to a 9 by 13 inch (or larger) baking dish and gently press it down to make one even layer. Bake for 60 minutes, or until it begins to turn light brown and it feels a bit solid to the touch.
- Remove the granola from the oven and let it cool completely before transferring it to an airtight container for storage.

Love the simple, natural ingredients in this granola. My main gripe with mass produced granola is all the yucky oils they use. So much better to make your own with unrefined sugar and healthy fat/coconut oil!
