2 peaches peeled and chopped 1 cup chopped mango 2 tbsp shallots diced 2 tbsp cilantro chopped 1/2 jalapeno diced Juice of 1 lime 1/2 tsp cumin Salt and pepper to taste 3 cups cooked black beans 1 1/2 cups shredded cooked chicken (4 oz) 4 1/2 cups cooked rice
