Chop the peaches, tomatoes, onion, bell peppers, and cucumber. Place them in a food processor.
Dice the jalapeno pepper and add it to the food processor along with the lime juice and salt.
Pulse 7 or 8 times and then check the consistency of the salsa. Continue pulsing until you get a slightly chunky consistency. You don’t want to liquefy the whole mixture.
Store the salsa in the refrigerator in an air-tight container.
