This pizza soup is such a fun, easy dinner recipe. It's made with tomato sauce, mushrooms, onion, garlic, broth, mozzarella, parmesan cheese, and a delicious combination of seasonings including basil and oregano.
In a large pot, saute the onion in the olive oil over medium heat until softened. Add the garlic and saute for another minute over medium low. Add the mushrooms and cook, covered, for 5 more minutes.
Add the tomato sauce, chicken broth, honey, basil, oregano, and salt to the pot. Bring to a boil, then lower the heat and simmer the soup over medium low heat for 30 minutes.
Divide the warm soup into soup bowls and garnish with the grated cheese. Serve warm.
