2cupschopped lettuce
1/4cupfeta cheesecrumbled
1tbsbalsamic vinegar
Instructions
Cut the watermelon into 3/4-inch thick slices. Using a 3-inch cookie cutter or glass, cut out 8 watermelon circles.
Set up four plates, and set one circle on each plate.
Place 1/4 cup of chopped lettuce on top of each watermelon circle.
Sprinkle 1/2 tablespoon of feta cheese on each pile of lettuce.
Place the remaining 4 watermelon circles on top of each lettuce pile, then top with the remaining lettuce and feta. Sprinkle each salad with 1/4 tablespoon of balsamic vinegar.
