- 1 tbs rice vinegar
- 2 tbs olive oil
- 2 tbs salsa
- 1 head of lettuce
- 1 cucumber chopped
- 1 cup grated carrots (about 3)
- 1 cup cherry tomatoes
- 3 cups black beans seasoned to taste with taco seasoning
- 1 cup crushed tortilla chips
- 3 scallions diced
Add the rice vinegar, oil, and salsa to a small jar. Shake to combine.
In a large salad bowl, toss together the remaining salad ingredients.
Pour the dressing over the salad and toss to cover evenly. Enjoy!
