Rinse the uncooked quinoa in a fine-mesh strainer, then place it in a medium pot. Add the apple cider to the pot, cover, and bring to a boil. Turn the heat down to medium-low, and simmer for about 15 minutes, or until the quinoa is tender but still chewy.
Remove the pot from the stove and stir in the remaining ingredients. The cranberries and apples can be stirred into the mixture or served on top. Serve warm.
