Chocolate chip cookies are the first dessert I mastered. I owned that recipe on the chocolate chip package. I made them so many times that I memorized the recipe, and I looked for excuses to make them.

I’ve learned to cook many other things over the years, but chocolate chip cookies are still a favorite. This cast iron skillet chocolate chip cookie is a delicious treat that’s healthier than your average cookie.

Skillet Cookie Tips

On Super Bowl Sunday, I made a skillet cookie for dessert from a recipe I found online. It was delicious, but it was so sickeningly sweet that I could barely eat it. (Okay, I could eat it just fine, but I didn’t feel well afterwards.)

This version is much more reasonable. It’s a delicious dessert that you can enjoy without the guilt. If you can save some leftovers, this skillet cookie tastes even better the second day. Substitute white whole wheat flour if you’re not avoiding gluten.

If you want it cooked through, leave it in the oven for 30 minutes. For a more gooey version, check it between 20 and 25 minutes.

Ingredients

  • 1 1/2 cups gluten-free flour
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 2/3 cup melted coconut oil cooled
  • 2 eggs
  • 2/3 cup maple syrup
  • 1 1/2 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  • Preheat the oven to 350 degrees and grease a 9-inch cast iron skillet with coconut oil or butter.
  • In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In the bowl of a stand mixer, mix the coconut oil, eggs, maple syrup, and vanilla extract until well-combined.
  • Add the dry ingredients to the mixing bowl in 2 batches, and mix well after each addition to fully incorporate the flour. You’ll need to scrape down the sides a couple times.
  • Stir in the chocolate chips.
  • Transfer the batter to the prepared skillet. Press down with a spatula or your fingers to even out the batter.
  • Bake for 20 to 30 minutes, depending on how “done” you want it. The top will be set at around 20 minutes, but the inside won’t be cooked through. It will become more cake-like between 25 and 30 minutes. Insert a toothpick in the center, and when it comes out clean, it’s cooked through (but not as ooey-gooey as it was five minutes ago).

  1. Would love to try the skillet choc chip cookie. Is there an alternative I could use for Maple syrup please, as it is extremely expensive in SA. To use the required quantities of our ordinary syrup would make it much too sweet. Thx

  2. Annemarie, this was a HUGE hit! We were in charge of desserts for New Year’s Eve, so I made this and then of course some not- so- healthy cookies for the guys. Well….the guys ate the cake instead!! Question: can I use same recipe with a mini muffin tin? Thank you ☺️

    1. I’m so glad everyone liked it! I haven’t tried baking this in a mini muffin tin, but I’m sure it would work. The baking time would be very short, though. Keep a close eye on it in the oven so they don’t dry out. Let me know if you try it.

  3. I just took this out of the oven and it looks AMAZING (and the house smells like one giant chocolate chip cookie!!) This was super simple and I love the simple, real food ingredients. I subbed melted organic butter for the coconut oil (just because of personal taste preference) and used the Enjoy Life mini chocolate chips. Can’t wait to serve this at our dinner party tonight, topped with fresh whipped organic cream!!! Mmmmm…thank you for this wonderful recipe!

  4. Yum, I made this tonight! My cast iron skillet is 12″ so I used a deep dish pie plate, and it worked out really well!
