This kale avocado salad is a healthy, delicious combination of flavors. It’s a sweet kale salad featuring strawberries, mandarin oranges, and avocado.

I love adding fruit to make a sweet kale salad. The avocado adds creaminess, and the fresh kale and cabbage give it lots of crunch and color. With just 5 ingredients plus the dressing, this salad comes together in minutes.

Kale Avocado Salad Tips

For this kale avocado salad, you want the avocados to be ripe but not mushy. To test for ripeness, press gently on the neck of the avocado by the little tan button. If it yields slightly to gentle pressure, your avocados are ripe and ready to be cut into chunks. If it yields very easily to light pressure, the avocado is more suited for guacamole.

I like to dress this kale avocado salad with my homemade citrus dressing. It’s also good with a simple dressing of oil and vinegar or a light poppy seed dressing. Feel free to substitute your favorite dressing.

For the best presentation, put the dressing on the kale and red cabbage before layering the other ingredients on top. This will keep the avocados, strawberries, and oranges from falling apart during the tossing process.

If you have other greens on hand, you can substitute them for some of the kale or cabbage. Spinach or lettuce will also work well in this recipe. This kale avocado salad is very flexible and can be adapted to suit your tastes.

Ingredients

  • 6 cups chopped kale
  • 2 cups chopped red cabbage
  • 3/4 cup mandarin orange sections
  • 4 oz chopped strawberries
  • 2 avocados chopped
  • citrus vinaigrette

Instructions

  • Place the kale and red cabbage in a large bowl.
  • In a small bowl, stir together the citrus vinaigrette ingredients. Pour the dressing over the kale mixture, and toss to distribute evenly.
  • Divide the dressed kale mixture among 4 plates or bowls for serving. Top each portion with 1/4 of the mandarin oranges, chopped strawberries, and avocado.

    I believe this is an adaptation of one of my favorite kale salads! I’m so excited that you did a little brainwork for me! 🙂 I will try this next time. Love the pears adaptation … dare I roast them first?!

    Annemarie,
    This looks delicious-and I love the seasonal fruits. I could see this in the spring with spring kale, spring radishes, and strawberries.
    I have never been in the happy predicament of having too many ripe avocados, but Marlene at Nosh My Way posted that they can be frozen–so that’s another option.
