Happy Memorial Day!

We’re in the final stretch to summer vacation. I’ve heard from friends in the South that their kids are already getting out of school. We have a few more weeks here in Massachusetts, and our schedule is still in full force.

My summer farm share started up this past week, and this is the time of year when I come home from the farm with all the greens. This week, we got kale, spinach, arugula, and lettuce. I put the bok choy in the trade bin and swapped it for some extra potatoes. We love our greens, but there’s only so much we can eat in a week.

I’m making some easy favorites this week. Pasta, chili, and nachos are some of our go-to dishes when I’m pressed for time. My kids don’t always love salmon, but I do get away with this chili lime version. And throughout the week, the greens will find their way onto our plates just about every night.

Sunday: Pasta with Marinara, Kale Chips
Monday: Vegetarian Chili, Green Salad
Tuesday: Chicken Nachos
Wednesday: Lemon Broccoli Pasta
Thursday: One Pot Ground Beef and Cabbage Skillet
Friday: Chili Lime Salmon, Roasted Asparagus, Sauteed Spinach
