Strawberry Rhubarb Smoothie

This strawberry rhubarb smoothie is a delicious, refreshing drink. Rhubarb is a perennial that’s very easy to grow, which makes it popular in home gardens.
Rhubarb’s tart flavor pairs perfectly with the sweetness of strawberries, making strawberry rhubarb pie such a classic. I add sweetness to this smoothie with banana and honey, and it’s a good source of protein and calcium. I love this combination of tart and sweet.
Strawberry Rhubarb Smoothie
Ingredients
- 1 cup strawberries
- 1/3 cup chopped rhubarb
- 1 ripe banana
- 3/4 cup yogurt
- 1/2 cup milk
- 2 tbs honey
Instructions
- Chop the rhubarb into 1-inch pieces and place them in boiling water for one minute. Transfer the rhubarb to a bowl of ice water to stop the cooking.
- Place all the ingredients in a blender. Combine until smooth, and taste to see if it needs a little more honey. (I love how my high-powered blender makes it perfectly smooth.)
- Divide into 3 glasses. Enjoy!
