Spinach Strawberry Walnut Salad
Ingredients
- 1 tbs olive oil
- 1 tbs water
- 1 tbs pure maple syrup
- 1 1/2 tbs apple cider vinegar
- 1/4 tsp salt
- 1 pinch onion powder
- 3 oz fresh baby spinach (about 6 cups loosely packed)
- 8 ounces medium strawberries sliced
- 1/2 medium cucumber quartered and sliced
- 1/4 cup chopped walnuts
Instructions
- In a small bowl, stir together the olive oil, water, maple syrup, apple cider vinegar, salt, and onion powder.
- In a large salad bowl, add the spinach, strawberries, and cucumbers. When ready to serve, toss the salad with the dressing and chopped walnuts.
- If not serving immediately, refrigerate the salad and the dressing separately.
