One dish meals make dinnertime so easy. I love the simplicity of putting just one pot in the middle of the dinner table. It makes doing dishes easier, too.
This chicken mushroom casserole is such a crowd-pleaser. The rich flavors of bacon, leeks, and mushrooms come together in this cozy meal.
This isn’t exactly a casserole in the traditional sense. Rather than cooking everything together in the oven, I cook the meat and vegetables separately. Sometimes certain ingredients in a casserole can get overcooked while they’re waiting for the other ingredients to finish cooking. With my approach, I can be sure that the chicken isn’t dry and the celery doesn’t turn to mush. If you decide you want to try baking everything together, I recommend cooking the bacon separately and stirring it in at the end.
You can serve this dish on its own, or add it to pasta or rice to stretch it a bit. Either way, everyone will love the flavor of this delicious comfort food.

Ingredients
- 4 pieces bacon
- 1 1/2 lbs chicken breast
- 1 tbs olive oil
- 2 large leeks sliced
- 2 stalks celery chopped
- 1 lb mushrooms sliced
- 1 tsp fresh thyme
- 1/2 tsp salt or to taste
- 1 cup chicken broth
Instructions
- Preheat the oven to 400 degrees.
- In a large roasting pan, cook the bacon and chicken together for about 20 minutes. Flip the bacon after 10 minutes of baking. Remove the bacon when it’s done to your liking, and test the chicken with a meat thermometer. It’s done when it reaches an internal temperature of 165 degrees in the thickest part of the chicken breast. Chop the cooked chicken and bacon into bite sized pieces. Lower the oven temperature to 325 degrees.
- While the chicken and bacon are cooking, prepare the vegetables. Heat the olive oil over medium heat in a large, oven-safe casserole dish or skillet. Add the leeks, celery, mushrooms, thyme, and salt. Stir together and cover. Cook over medium heat for about 5 minutes, or until the vegetables are crisp tender.
- Add the chicken broth to the pan, along with the cooked chicken and bacon. Stir together, and transfer the mixture, covered, to the 325 degree oven. Heat everything together for five minutes. Serve warm.
