Cranberry Vanilla Chia Pudding

Cranberry vanilla chia pudding is a delicious fall snack or dessert recipe. This pudding is very flavorful and filling, so it’s the perfect healthy snack to tide you over until your next meal.
Chia pudding is one of my favorite snacks to have on hand. In addition to all the different tasty combinations you can make, I love that chia pudding is so filling. It’s hearty enough to get me from one meal to the next, which isn’t the case with most snacks.
This cranberry vanilla chia pudding has a mild flavor that pairs well with clementines or other citrus fruit. The key to making a smooth chia pudding is to stir the seeds several times for the first 10 minutes after you add them to the liquid ingredients. This keeps the seeds from clumping together, and it helps to thicken the pudding evenly.
For a more intensely tart flavor, you can add a couple extra tablespoons of cranberries. Taste the liquid mixture before refrigerating and adjust the flavors to get them just right for your palate.

Ingredients
- 1/2 cup cranberries
- 2 cups coconut milk
- 2 tbs pure maple syrup
- 1/2 tsp vanilla extract
- 1/2 cup chia seeds
- 3 clementines
Instructions
- In a blender or food processor, finely chop the cranberries. Add the coconut milk, maple syrup, and vanilla extract, and process to combine. It’s okay to leave little bits of cranberry in the mixture. Taste the mixture to see if you want to add a little more maple syrup or cranberries.
- Transfer the mixture to a medium bowl, and slowly whisk in the chia seeds. Stir every few minutes for the next ten minutes so the chia seeds don’t clump together, then refrigerate the pudding. It will start to thicken immediately, but for best results, refrigerate for a few hours before serving.
- Garnish with clementines and serve.
