This Pumpkin Macaroni and Cheese is delicious comfort food that gets a boost of nutrition from the pumpkin puree. Pumpkin is rich in vitamin A and several antioxidants, so it’s more than just a festive fall decoration. My basic macaroni and cheese recipe is adapted from Joy of Cooking. The addition of pumpkin makes it a little sweeter and creamier than the original version.
You can’t actually taste the pumpkin, but the creamier texture is wonderful. You can embellish this recipe with peas, broccoli, bacon, or anything else you might toss into your macaroni and cheese. I’m so glad that Kirsten from Farm Fresh Feasts recently suggested adding pumpkin puree to mac ‘n cheese. I think this may become a family favorite.
- 12 ounces short whole wheat pasta
- 2 tbs butter
- 2 tbs white whole wheat flour
- 2 cups whole milk
- 3/4 cup grated cheddar cheese or to taste
- 1 1/2 cups pumpkin puree
- 1/2 tsp salt
- 1/3 cup grated Parmesan or Romano cheese
- Preheat the oven to 350 degrees and grease a 9 x 13 inch pan.
- Boil the pasta according to the package instructions. Drain and set aside.
- In a skillet, melt the butter and add the flour. Whisk together over medium heat for a few minutes.
- Gradually add the milk to the butter and flour. Whisk for about 5 minutes over medium heat until it starts to thicken.
- Remove the pan from the stove and stir in the cheddar cheese, pumpkin puree, and salt. Add the cooked pasta and stir to coat evenly.
- Transfer the mixture to the 9 x 13 inch pan and sprinkle the grated Parmesan on top. Cover with foil and bake for 20 minutes. Remove the foil and bake for about 10 more minutes, until the top begins to brown.
- Serve warm.
