I’m always excited for the start of fall, and it’s mostly because of pumpkins. The thought of all the goodies I can make from pumpkin is enough to put a smile on my face.
I get lots of sugar pumpkins and other bakeable squashes from my farm share. Sometimes canned pumpkin is actually hubbard squash, which is smooth, creamy, and bright orange when cooked. As the pumpkins and squash come pouring in from the farm, I roast them and puree them for storage in the freezer. That way, I have a good supply well into the winter. When it runs out, I’m not above picking up a can of pumpkin puree from the store to keep things going.
