Flavor Variations: You can add a tablespoon of red wine along with the lemon juice for extra flavor. Sprinkle the pasta sparingly with salt and pepper; you shouldn’t need much since there are already so many other flavors happening here. A little fresh Parmesan cheese goes a long way, too.

Salmon Pasta Recipe
- 1 lb pasta of choice
- 2 tbs avocado oil
- 1 tbs diced poblano or ancho pepper
- 6 oz canned salmon boneless and skinless
- 1 cup chopped sun dried tomatoes
- ¼ cup lemon juice
- 3 cups baby spinach
- Salt and pepper to taste
- In a large pot, boil the pasta according to the package directions. Set aside.
- In a large skillet, heat the oil over medium low. Add the poblano pepper and saute for a minute to soften. Add the salmon, sundried tomatoes, cooked pasta, and lemon juice. Stir to combine. Add the spinach and season with salt and pepper. Turn off the heat and cover the pan for a couple minutes to wilt the spinach.
