This Mediterranean salmon pasta recipe is an easy, healthy dinner. It gets its irresistible flavor from a combination of canned salmon, lemon, sun dried tomatoes, and spicy peppers.
Quick dinner recipes are essential in my house during the week. When I don’t have my meals planned out, I need to be able to look in my pantry and find something that’ll work for dinner.
This canned salmon pasta recipe is made up of ingredients that I typically keep on hand. My family likes the boneless, skinless canned salmon from Costco, which I’ve been stocking lately for salmon cakes and other quick, healthy recipes like this Mediterranean pasta dish.
The flavor of this canned salmon pasta recipe is surprisingly complex. The sweet, tangy flavor of the tomatoes is a great complement to the spicy pepper and savory salmon. The spinach turns this into a one-dish meal.
Salmon and Pasta Recipe Tips
Pasta: You can use any type of pasta for this dish. There are many good gluten-free and whole wheat pastas available. I recommend using a short pasta like penne that can easily soak up the different flavors here.
Pepper: Using a medium spicy pepper gives this recipe just the right kick. I like poblano or ancho pepper, but you could also use a jalapeno pepper if you want it even spicier.
Salmon: Look for a boneless, skinless variety of canned salmon. The Alaskan canned salmon from Costco is good, but there are many other high-quality options available. You could also used leftover baked salmon in this salmon pasta recipe.
Flavor Variations: You can add a tablespoon of red wine along with the lemon juice for extra flavor. Sprinkle the pasta sparingly with salt and pepper; you shouldn’t need much since there are already so many other flavors happening here. A little fresh Parmesan cheese goes a long way, too.
