Salmon and Pasta Recipe Tips

Pepper: Using a medium spicy pepper gives this recipe just the right kick. I like poblano or ancho pepper, but you could also use a jalapeno pepper if you want it even spicier.

Ingredients

  • 1 lb pasta of choice
  • 2 tbs avocado oil
  • 1 tbs diced poblano or ancho pepper
  • 6 oz canned salmon boneless and skinless
  • 1 cup chopped sun dried tomatoes
  • ¼ cup lemon juice
  • 3 cups baby spinach
  • Salt and pepper to taste

Instructions

  • In a large pot, boil the pasta according to the package directions. Set aside.
  • In a large skillet, heat the oil over medium low. Add the poblano pepper and saute for a minute to soften. Add the salmon, sundried tomatoes, cooked pasta, and lemon juice. Stir to combine. Add the spinach and season with salt and pepper. Turn off the heat and cover the pan for a couple minutes to wilt the spinach.
  • Serve warm.
