This vanilla brown rice pudding recipe is such a delicious, healthy snack.

Vanilla rice pudding is delicious comfort food. I love having it for a healthy snack or dessert. My Instant Pot rice pudding is a vegan version, and this recipe uses whole milk to get that rich rice pudding texture.

I make this recipe with short grain brown rice and five simple ingredients. This warm, cozy treat is a great source of calcium, and the maple and vanilla flavors shine in this version.

Vanilla extract gives this recipe a delicious flavor. If you have a whole vanilla bean, you can use that instead. Scrape out the insides of the bean and add it to the mixture while cooking.

This rice pudding recipe is a great addition to a lunch box or after-school snack spread, but you can serve it for dessert too. It could even work for a fun breakfast treat.

  1. My husband always says how his grandmother used to make rice pudding. I’ve actually never had it myself and he hasn’t had it since he was little. Maybe I’ll surprise him one day with this recipe!

  2. We didn’t eat rice pudding growing up because my mom didn’t keep white rice in the house. She tried to get us to eat as many whole grains as possible, but I wish she had realized that you could make rice pudding with brown rice instead! Looks like a healthy and delicious dessert!

    1. Thanks, Amy! Yes, rice pudding is traditionally made with white rice, but I hardly notice the difference with short grain brown rice. I hope you’ll give it a try.

  3. Annemarie,
What a great way to use those beans you posted at that great price! I’d heard of making vanilla sugar, but this sounds very cozy and comforting and better.

    Thanks!
