Chia pudding is one of my favorite filling snacks. I make several different flavor combinations, from coconut and pumpkin to chocolate banana and mango. It’s such a satisfying snack because the chia seeds expand in your stomach, and it also tastes delicious.

This apple chia pudding has the best fall flavor. The cider gives the pudding its apple taste, and diced apples add a little more flavor and crunch.

Chia Pudding Tips

The key to making a smooth chia pudding is to stir the seeds periodically for about 10 minutes after you add them to the liquid. This keeps the seeds from clumping together and it thickens the pudding evenly.

The pudding will begin to thicken right away, but it’s best to refrigerate it for a couple hours to let it fully thicken before eating.

I like to use coconut milk as the base for chia pudding. There’s no need to buy coconut milk when you can make your own for just $.14 a cup.

Ingredients

  • 2 cups coconut milk
  • 1/2 cup apple cider
  • 2 tbs pure maple syrup
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 1/2 cup chia seeds
  • 1 apple cored and diced
  • 3 tbs diced walnuts

Instructions

  • In a large bowl, mix together the coconut milk, apple cider, maple syrup, cinnamon, nutmeg, ginger, and salt.
  • Stir in the chia seeds. Whisk the mixture every couple minutes for 10 minutes, then refrigerate. It will start to thicken right away, but it’s best to refrigerate it for a couple hours so it has a chance to fully thicken.
  • To serve, divide the chia pudding into 4 bowls and top with diced apples and walnuts.
