This pina colada smoothie is a delicious vegan snack. It's a refreshing drink on a warm summer day, and it will remind you of the tropics during the winter.

This month’s Recipe Redux challenge asks members to use seeds in a recipe reflecting the summer season. Seeds can boost the nutritional profile of a recipe while also adding extra flavor and texture. I love sprinkling sesame seeds on a salad and tossing a handful of sunflower seeds into my granola. On the first official day of summer, I’m sharing a classic summer drink in the form of a smoothie.

This pina colada smoothie is a refreshing vegan drink. To increase the protein and fiber, I include a tablespoon of sunflower seeds. In a smoothie, you don’t want a strong taste of the seeds, but they add thickness and nutrients to the final product. This quick, easy smoothie tastes so refreshing on a warm summer day. For a different twist, you could freeze this in popsicle molds for a sweet frozen snack.

Ingredients

  • 1 cup coconut milk
  • 1/2 a banana
  • 1 cup crushed pineapple fresh or canned
  • 2 tbs lime juice
  • 1 tbs sunflower seeds

Instructions

  • Place all the ingredients in a blender or food processor. Combine until smooth.
  • Enjoy immediately or store in an airtight container in the refrigerator.
