These peanut butter cookie dough bites are a healthy, energy-boosting snack. You’ll be amazed at how simple they are to make. A combination of peanuts, dates, and chocolate, they come together in just a few minutes. They’re great for an after-school or post-workout snack. If you can resist eating the whole batch right away, you can store these in the refrigerator or on the counter if it’s not very warm in your house.
Ingredients:
½ ounce bittersweet baking chocolate (single ingredient: chocolate)
1 cup dates
½ cup peanuts
¼ cup unsweetened peanut butter (single ingredient: peanuts)
- In a food processor, chop the chocolate into little bits. Remove them and set aside.
- Add the remaining ingredients to the food processor and run it until a paste forms. Don’t puree the ingredients so much that you can’t see little bits of each ingredient.
- Add in the chocolate and mix together for several seconds.
- Form the dough into 1-inch balls.

Where do you get bittersweet chocolate that just has chocolate in it?
Jenny, I use Baker’s Chocolate unsweetened baking squares (the orange box). You can find it in the baking aisle at most supermarkets. If you can’t find it, you could substitute cocoa powder.

Hey, I just started following you and am loving your recipes! As I’ve slowly been cleaning up my family’s food, my taste for sugar has gone out the window, but my mental cravings for treats remain! So I love all of this great stuff without sugar.
Question–I don’t have a food processor (yet
–am saving up for a KitchenAid mixer + FP + ice cream maker). Could I do this in a blender, do you think? Would it help if I pre-chopped everything with a knife? Ahhhhh, I need a food processor! Thanks for the great stuff, keep it coming!
Welcome, Eliza! I’m glad you found me. This would work in a blender if you have a good, sharp blender. I would recommend using cocoa powder instead of the solid piece of chocolate. Also, pre-chop the dates. Worse case, you could hand-chop the nuts and dates as finely as possible and then mix it all together. Let me know if it works for you. (p.s. Check out yard sales and church tag sales – you may find some of those kitchen appliances for a great price.)
This recipe looks wonderful for any time, but I’ve also got race training coming up over the next few months so this will make a great energy snack.

Also to Eliza, I found a really nice $300 food processor on Craigslist for 80 bucks. Somebody bought it, and a year later they realized they never used the thing. It’s certainly hit or miss, but there are some really good buys out there! People have different comfort levels around buying used, but take a look. Good luck!
